Title: Peachy Salsa
Categories: Entree Pasta Vegan
Yield: 2 Cups

1/3cCilantro, lightly packed
2cPeaches, peeled & diced
2cTomatoes, diced
1tsLemon juice
1pnBlack pepper
1/4tsSalt
1/2tsGarlic, crushed
1tsOlive oil
2tsBalsamic vinegar
  Cayenne, to taste

Place all ingredients in a blender or a food processor & process for a few seconds. Serve immediately over hot, fresh pasta or refirgerate until ready to serve.
